Tom Yam Soup

Ingredients   Servings: 2 people

Tom Yam paste
70g (1 sachet)
Prawns
8-10 pieces
Fish sauce
1 tbsp
 Dried kaffir leaves 4 pieces
 Dried chillies2 pieces
 Galangal paste15g (1 sachet)
 Shallots2 pieces
Lemongrass
 1 stem
Mushrooms
100g
Lime juice

Method

1. Boiled water with spices

Boil 500ml of water. Add 1 chicken stock cube. 
Add 1 stem lemongrass (sliced), 2 small shallots (minced), 1 sachet of galangal paste, a few kaffir lime leaves and 2 red chillies.

2. Add Tom Yam paste

Stir in Tom Yam paste.

3. Add prawns & seasoning

Add prawns (headless), mushrooms (quartered) and 1 tbsp. fish sauce. Add 1 tbsp. lime juice. Simmer until cooked through.

4. Garnish & serve

Garnish with fresh coriander.
Serve in soup bowls.
