Tom Kha Kai Soup

Unforgettably creamy coconut soup

Ingredients   Servings: 2 people

Tom Kha Kai Coconut Creamy Soup
Chicken breast (sliced)   150g
Tom Kha stock2 sachets
Coconut Cream165ml
Fish sauce1 tbsp
Dried Lime Leaves2 pieces
Mushrooms (sliced)5 pieces
 Lemon juice1 tbsp
Fresh coriander1 bunch

1. Cook the chicken

Bring 350ml of water to the boil in a large saucepan.
Add the chicken breast once the water has reached the boil.

2. Prepare the base of the soup

Add the mushrooms and then the 2 sachets of Tom Kha instant soup powder. Stir until the granules have dissolves into the water.

3. Add coconut cream

Once you have a smooth soup base, pour in the coconut cream. Then add the 2 kaffir leaves and the fish sauce.
Turn down the heat and simmer until all the ingredients are cooked through.

4. Garnish & Serve

Serve your Tom Kha Kai in soup bowls. Add lemon juice and garnish with fresh coriander.
