A refreshing and easy summer dish. A refreshing starter or light main course, Salmon ceviche with lemongrass is a perfect balance of crunchy, tender, sweet and lemony.

Salmon 150g
 Lemongrass Dressing 1 bottle
Garlic 1 clove
Shallots 2 pieces
Red chillies 2 pieces
Lemongrass 2 stems
Basil leaves 1 bunch
Mint leaves 1 bunch
Fresh coriander 1 bunch

Mince the vegetables

Mince all the herbs and spices finely.

Slice the salmon

Cut the salmon into thin slices.

Add the dressing

Place salmon slices into small serving cups or bowls. Lather 1 tsp of lemongrass dressing over each serving.
