Beef Noodle Salad

Zesty and fragrant salad

Ingredients   Servings: 2 people

  Pad Thai rice noodles
 Beef sirloin150g
 Cherry tomatoes (quartered) 6 pieces
Cucumber (julienned) 1 piece
Mint 1 bunch
Coriander 1 bunch
Onion1 piece
Wok oil with red chillies
 2 tbsp
 Fish sauce5 tsp
Coconut sugar1 tsp
Lime2 pieces


1. Cook the rice noodles

Boil the rice noodles for about 5 minutes until they’re soft.
Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use.

2. Marinade & stir-fry sirloin steak

Marinade the sirloin steak with “Wok oil” red chillies oil and Thai spices.
Stir-fry the sirloin steak until medium-rare. Once cooked, slice the beef into thin strips and set aside to cool.

3. Prepare the dressing

Combine the fish sauce, lime juice and sugar in a bowl and mix together well.

4. Make the salad

Put the rice noodles in a salad bowl, then add onion, cherry tomatoes, cucumber, mint, coriander and sliced beef. Add the dressing and mix well before serving.
