Stir-fried Rice Noodles with veggies

Super easy to make in a snap!

Ingredients   Serves 2

Rice Noodles
 Oyster Sauce2 Tbsp
Light Soy sauce1 Tbsp
Fish Sauce1 Tsp
 Coconut Sugar 1 Tsp
Garlic Cloves 2 pieces
Tofu (cubed)150g
Broccoli florets100g
Bell Pepper
1 piece
Cherry Tomatoes 4 pieces
 Baby Corns 60g
 Mushrooms 60g


1. Cook the rice noodles

Boil the rice noodles for about 5 minutes until they’re soft.
Drain the noodles and then rinse them thoroughly with cold water, this will prevent them from cooking further and becoming too soft to use.

2. Prepare the seasoning sauce

In a glass jar combine oyster sauce, soy sauce, fish sauce and coconut sugar. Mix well and set aside.

3. Stir fry the vegetables

Add garlic, tofu, broccoli florets, bell peppers, baby corn, cherry tomatoes and mushrooms. Stir-fry for about 2 minutes.

4. Add noodles and seasoning sauce

Stir in rice noodles and seasoning sauce.
Stir fry until cook through and serve immediately.
