Som Tam Salad

Green Papaya Thai Salad

Ingredients   Servings: 2 people

 Underripe Papaya  (or Mango) 1 piece
Carrot1 piece
Green Beans50g
Cherry tomatoes 5 pieces
Chillies1 or 2 pieces
Garlic 1 clove
Fish sauce2 tbsp
Tamarind Paste15g (1 sachet)
Lime1 piece
Unsalted chopped peanuts20g


1. Slice the vegetables

Peel the papaya (or mango) and the carrot.
With a sharp knife, cut into julienne strips.

2. Pound the spices

Pound the garlic and chilli together in a pestle and mortar. 
Cut the green beans (cooked after a minute or two) into short lengths 
and pound very lightly, just to bruise them.
Place in a mixing bowl.

3. Make the dressing

Add the sugar, lime juice, fish sauce and tamarind paste.

4. Make the salad

Add papaya (or mango) and cherry tomatoes.
Mix together. Serve sprinkled with chopped peanuts.
