Lemongrass Beef

Ingredients   Servings: 2 people

Sirloin beef steak (sliced) 250g
Lemongrass paste15g (1 sachet)
Fish sauce1 tbsp
Garlic (chopped)2 cloves
Baby corn (halved) 60g
Bell pepper (sliced)½  piece
Onion (sliced)1 piece
Coriander (chopped)1 bunch

Method

1. Stir-fry the garlic

Heat 1 Tbsp of vegetable oil in a saucepan on medium heat.
Stir-fry the chopped garlic until golden brown.

2. Stir-fry the beef

Next, add onion and stir-fry until it turns a light gold colour.

Then add the sirloin steak.

3. Add the vegetables

Throw in the bell pepper, and the baby corn.
Stir-fry the contents of the saucepan until cooked through.

4. Add the lemongrass paste

Add 1 sachet of lemongrass paste and 6 Tbsp of water. The water will break down the paste and thicken the sauce so it can spread all over the ingredients.

5. Add the seasoning

Add the sugar and the fish sauce, and bring the saucepan to the boil. Then lower the heat and simmer for a short while to develop all the flavours and aromas.

6. Plate your dish

Serve your dish with a handful of fresh coriander.
